Vegan onion soup

Ingredients 1 to 2 Onions 1 liter of Vegetale broth (I like to use liquid vegetable broth that come in cartons.) Olive oil Hot sauce (optional) Lime (optional) Wine, port or sherry (optional)  Spices such as oregano or scallions (optional) Instructions 1. Peel and slice the onions. 2. Line the bottom of a soup pot with olive oil. 3. Fry the onions until they are transparent and soft. Some people prefer to fry until the onions are caramelized.  That's up to you. 4. Add the broth and let it simmer on low heat for about 10 minutes.  5. Let the soup sit for at least 5 or 6 hours. 6. Reheat. 7. I like to add lime and hot sauce. 8. Alternatively, I like to add red wine, port or sherry. 9. Sprinkle with spices such as oregano or scallions (optional)  10. Serve hot.
